Welsh Cakes Recipe

This is a handed down recipe. A great aunt used a griddle, an aunt used an electric frying pan.
Sift together these first 4 ingredients:
- 3 cups flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 3/4 tsp salt (I don’t include salt when I make these)
- 1 or 2 eggs, depending on size, but I usually use 2 even if they are large
- approximately 6 Tbsp milk
- 1 cup sugar
- 1 cup shortening
- 1 cup currants
- 1 tsp nutmeg (I grate my own – it makes a difference)
Method
- Sift dry ingredients
- Cut in shortening
- Add sugar, nutmeg, currants
- Add egg and milk
- Form into a ball as would be done with soft pastry
- Chill in fridge
- Roll out to approximately 1/4 “ thick
- Cut circles using small size pastry cutter
- Cook on griddle or electric frying pan set on 300 degrees. (I just use a regular frying pan: when golden brown turn over to cook other side.)
- When cooked on both sides, sprinkle with sugar
